Henri Boillot's white Burgundy wines include a Batard Montrachet, four Puligny Montrachet 1er crus (Clos de la Mouchère, Combettes, Pucelles and Perrières) and a Village, as well as a Meursault 1er cru Genevrières. The wines are fined and filtered before bottling. Son Guillaume Boillot's red wines include three Volnay 1er crus (Caillerets, Chevrets and Fremiets) and a Volnay village. The wines are matured in 350-litre oak barrels for 12 to 18 months, depending on the appellation. Domaine Henri Boillot strives for the authenticity and definition of each terroir. The whites are elegant and precise, full of energy, finesse and minerality. The reds are more structured and full-bodied, with noble tannins that can be likened to a certain delicacy. The fine appellations offered by Maison Henri Boillot (négoce) are numerous (9 Grands crus: Corton Charlemagne, Bienvenues Batard Montrachet, Chevalier Montrachet, Criots-Bâtard Montrachet, and Montrachet en blanc, as well as Bonnes Mares, Chambertin, Chambertin Clos de Bèze and Clos de Vougeot. The 1st growths include Pommard Rugiens, Meursault Perrières, Charmes and Poruzots, and Puligny Montrachet Caillerets and Folatières. In terms of vintages, 2014 was a great year for white wines, with particularly floral aromas and good ageing potential in the cellar. As for the reds, 2015 was an excellent vintage, with very low yields. The estate's wines are highly rated by the critics, and as such deserve to be kept in the wine cellar.
