By calling on the advice of the famous Bordeaux oenologist Emile Peynaud, Mas de Daumas Gassac was able to impose the Cabernet Sauvignon grape variety on the limestone terroir of the upper Gassac valley, where the cool nights allow it to grow and flourish. A prestigious cuvée, the famous Cuvée Emile Peynaud (made from old Cabernet vines dating from 1972), was even dedicated to this grape variety in the 2001 vintage, as a token of the estate's appreciation. The younger generation of Aimé Guibert's sons had already taken over at the estate in the early 2000s, and now preside over the destiny of the 42-hectare estate (including 13 hectares of white Languedoc). In red Languedoc, and thanks to the Cabernet Sauvignon (almost ¾ of the blend), the iconic Mas de Daumas Gassac red wine has the appreciable advantage of being able to age very well, and 10 to 15 years in the bottle often allow it to refine its tannins and thus express all its complexity and originality. The white wine from Mas de Daumas Gassac is fairly rich and full-bodied, with powerful peach and apricot flavours (due to the Viognier grape variety). It could sometimes (in certain vintages) be mistaken for an off-dry wine. Daumas Gassac's red wine is quite varietal and austere in its youth (Cabernet Sauvignon + Cabernet Franc), with a rich but tannic finish. It is therefore advisable to wait a few years before drinking it. Just taste the 1988, 1990, 1995, 1998 or 2003 to be convinced. When time does its work, red wine is at its best.
