The vines are planted on limestone soils, giving the Syrah and Cabernet Sauvignon grapes a fine minerality that is fully expressed. Since its creation, the vineyard has been run according to the principles of organic farming. The Domaine de Trévallon had to leave the Baux de Provence appellation, which it had helped to promote, because of the excessive proportion of Cabernet Sauvignon. Domaine Trévallon produces around 60,000 bottles a year. The wines are relatively tannic when young and require patience. Domaine Trévallon therefore sells an older vintage along with the latest vintage. Among the older vintages : Trévallon 2000 red has a complex, smoky nose, with notes of candied fruit evolving towards a truffle flavour. On the palate, there are fruity notes, good acidity and a peppery finish. Trévallon 2005 red also offers notes of red fruit, spices and excellent balance. In 2009, the nose focuses more on ripe blackcurrant and cherry fruit, evolving towards notes of black olives. The palate is full-bodied with silky tannins. This is a great vintage for Domaine Trévallon. The white Trévallon 2014 has a nose of vanilla, apples and white flowers. The palate is very long, with notes of apple tatin, honey and a hint of saffron. Finally, the 2016 white has a beautiful green hue and a fresh, intense nose with notes of white-fleshed fruit. There's also a superb minerality thanks to the chalky soil. Smooth and well-balanced on the palate, with long-lasting aromas.
