The red cuvée St Aubin 1er cru Les Pitangerets is an easy-drinking wine that can be kept for 3 to 5 years. In white, the Chevalier Montrachet cuvée is very powerful but fine and taut, racy and very long. It can be kept for 8 to 12 years. The three Chassagne Montrachet 1er crus (Chenevottes, Macherelles and Clos St Jean) are full-bodied, dense, fatter and broader. They can be aged for at least 10 years. Domaine François Carillon also offers five cuvées in Puligny Montrachet 1er crus (Les Perrières, Champs Gains, Folatières and Les Combettes) and villages (including 1 lieu-dit, Les Enseignères). Les Perrières is very straightforward and pure. Les Combettes is sumptuous in its intensity, length and energy. In terms of ageing, the 1er crus can be kept for between 6 and 10 years and the villages for between 4 and 6 years. Domaine François Carillon's best vintages are: 2014, 2012, 2010, 2008, 2005, 2002. Domaine Carillon received a very good review from the RVF green guide (2 stars) and 3 out of 5 stars from the Bettane et Desseauve guide.
