The Domaine Baudry vineyard is planted with Cabernet Franc (90%) and Chenin Blanc (10%). The vines are on average around thirty years old and grow on a terroir of gravel on the plains, clay-limestone on the hillsides and sandy limestone on the plateaux. The vineyard is cultivated using environmentally-friendly methods, with no chemical weedkillers. Domaine Bernard Baudry has been certified organic since 2006. The wines are listed in the Chinon appellation. Domaine Bernard Baudry produces 140,000 bottles a year. The grapes are harvested by hand and the winemaking process is low interventionist. The grapes from each plot are vinified separately in different vats made of raw cement, wood or stainless steel. Fermentation is carried out using indigenous yeasts. The wine is matured in vats for the softer wines and in barrels for the more complex wines. The wine is bottled without filtration, except for the rosé and white wines and the cuvée Les Granges. Domaine Baudry's Chinon wines are fruity and supple, like the cuvée Les Granges and the cuvée Le Domaine, but also more structured wines with very fine tannins, like the cuvées La Croix Boissée, Le Clos Guillot and Les Grézeaux.
