In the Saint Aubin 1er Cru appellation, Domaine Hubert Lamy has acquired La Chatenière, Derrière chez Edouard, Murgers des Dents de Chien, Clos du Meix and En Remilly. And in the Saint Aubin appellation: La Princée, as well as vines in the Santenay Clos de hâtes, Santenay 1er Cru Clos des Gravières and Chassagne Montrachet 1er Cru Les Chaumées appellations.
Olivier Lamy's approach to vine-growing is a reasoned one, akin to organic farming. Vinification is particularly meticulous, with long maturation periods (12 to 18 months). The wines are lightly stirred and malolactic fermentation takes place in barrels. Concerned not to make his wines too heavy, Olivier Lamy chooses not to use any new wood and favours large containers, foudres and demi-muids. For example, the white wines are made from long pressings and matured in 600-litre demi-muids with little new wood, giving them a generous texture, ripe, perfectly integrated acidity and beautifully complex aromas. Like those from the Marc Colin estate, the old vintages from the Hubert Lamy estate are a fine expression of the Saint Aubin terroirs. Domaine Hubert Lamy produces around 110,000 bottles a year.
