It was only later, in 2006, with the arrival of his son Benoît to support him at the estate, that Domaine Yannick Amirault was certified organic. At the same time, Yannick Amirault has never stopped using biodynamic methods for every aspect of his wines. Since 2000, the estate has covered 19 hectares, 2/3 of which are in the commune of Bourgueil and 1/3 in the commune of Saint-Nicolas-de-Bourgueil. Both appellations are planted with 100% Cabernet Franc grapes. The Domaine Yannick Amirault has 25 parcels of vines, each around forty years old on average. The grapes are always harvested by hand. The grapes are then destemmed in the vat room. The first wines are fermented in open vats and each vintage is vinified in truncated cone-shaped casks with long macerations of up to 6 weeks. Extraction is as gentle as possible and the practice of punching down the cap is still used, mainly in the water phase to avoid leaching the tannins from the pips. Domaine Yannick Amirault wines are matured in casks for between 10 and 30 months, depending on the vintage, before being bottled on the estate. Domaine Yannick Amirault's wines are of a very high standard, with the 'Les Malgagnes' cuvée in the Saint Nicolas de Bourgueil appellation, full-bodied with an expression of pinot noir, and a fuller, more delicate texture in the amphora-aged version, available from Vins et Millésimes. As with any single-vineyard appellation, the wines of Domaine Yannick Amirault express each parcel and each locality. The 'Les Quartiers' cuvée, in the Bourgueil appellation, is ripe but still needs time to mature. The "La Petite Cave" cuvée offers a fine chalky tension with good ageing potential. Finally, Le Grand Clos is the historic vintage of the Bourgueil appellation.
