Pinot Meunier, the king of the Marne valley and 59% of the Dehours et Fils vineyard, is used in the blend of most of the cuvées.

The diversity of exposures, geologies, grape varieties, altitudes and age of plantations are all nuances that the house allows to express through its cuvées: here we discover true Terroir champagnes. One of the special features of Dehours is that all the reserve wines have been aged in Solera since 1998 (a system of perpetual reserve, where each year the reserve is enriched by an additional year, with the young wines being aged by the old). By including part of this reserve in the blend of each bottle of Grande Réserve or Vignes de la Vallée, the history of Domaine Dehours et Fils is passed on through the combination of each of the years since the reserve was created. A third of the volume of this Solera is even taken each year to make up the entire cuvée Trio S de Dehours, which will be marketed after maturing in bottle for 42 to 54 months. The Dehours Terre de Meunier cuvée is 100% Pinot Meunier, and goes wonderfully with sushi and oysters. The pale-coloured Dehours Œil de Perdrix extra brut is a blend of predominantly Meunier grapes. A number of parcels located at the heart of the terroir (mid-slope and well exposed) are highlighted in a unique range called Collection, to produce cuvées that bear their names. These include Brisefer (100% Chardonnay), La Côte en Bosses (Pinot Noir, Meunier and Chardonnay), La Croix Joly (Pinot Meunier), Les Genevraux (100% Chardonnay) and Maisoncelle, one of Dehours' rare parcels of Pinot Noir.  Two other terroirs are farmed in the Coteaux Champenois: Les Rieux and Les Vignes de Mizy. The bottling (cellaring) and disgorging dates are indicated on the back label of each bottle. The base year for the blend is the year preceding the date of bottling. All Dehours et Fils champagnes are offered in an extra brut version, and the vast range of cuvées offers wines with suave, elegant accents and refined textures.
