It has to be said that the size of the Cornas AOC was once reduced to 65 hectares, but it now covers almost 150 hectares. All of Vincent Paris's vines are cultivated using sustainable methods, without insecticides or chemical fertilisers, and treatments are kept to a strict minimum. Weedkillers may still be necessary on very steep slopes that are difficult to work, and the rest is mown if the grass becomes a nuisance. Vincent Paris does everything he can to harvest the highest-quality grapes possible, including strict pruning, manual leaf removal from the bunches and even green harvesting. This is reflected in the quality of the different cuvées, and while the St Joseph Les Côtes, which comes from vines located on the heights of Sarras, 30 km north of Cornas, is a charming, fruity wine that should be drunk within 3 to 5 years, the other 3 red cuvées from Cornas are much more substantial. Vincent Paris' Cornas Granit 30 is a very deep red colour, with notes of black fruit and spices on the nose, and a full-bodied but fruity, peppery and spicy palate, with well-coated tannins and good length. Enjoy it with red meats. Cornas Granit 60 (60 being the average age of the vines and the slope of some plots) has spicy, jammy black fruit notes that will delight your taste buds. It has great concentration and length, with silky tannins (ageing potential 7-15 years). Cornas la Geynale is made from century-old vines with south-facing exposure, and comes from the best plots on a slope that stands out particularly well in the Reynard district. All the ingredients come together to produce an exceptional wine, a wine with a unique character, great complexity, a strong but silky tannic presence, powerful yet smooth aromas of ripe fruit, spices and roasted flavours, accompanied by superlative length on the palate. In short, it's a winner for density and flavour. However, you will need to be patient before drinking it (at least 8 to 10 years), and it can be kept for over 20 years. As far as vintages are concerned, the best years for the Cornas appellation are 1985, 1988, 1989, 1990, 1998, 2000, 2001, 2005, 2011, 2015 and 2017, and to make matters worse, the wines from the Vincent PARIS estate are very reasonably priced, so why deprive yourself?
