The Champagne tradition is omnipresent: the steepest vines are worked with Tango, the draught horse. Pressings are split and the 36 parcels are vinified separately. The Pouillon cuvées are vinified using indigenous yeasts, keeping intervention to a minimum. The vines at Domaine Pouillon are cultivated according to the principles of biodynamic viticulture, which is not certified.
The cuvée Pouillon brut réserve (base 2015) is the emblem of the Pouillon house, and an introduction to the spirit of the estate. The Solera extra brut is a very unusual cuvée, made using the solera method, with 16 vintages (from 1997 to 2012). It is a timeless vision of premiers crus and in, weathered by time. All the cuvées are lightly dosed, taut yet generous and unctuous on the finish, with delicate, gourmet bubbles.
The 2018 vintage was an exceptional one, with a rainy winter followed by an exceptionally warm spring and summer, enabling the grapes to be picked as early as August. This vintage, which was generous in terms of volume, showed great ripeness and incredible health, approaching the historic harvests of 1959, 1970, 1976 and 1982.
