Domaine Luc et Lise Pavelot is one of the historic estates of Pernand Vergelesses in Burgundy, as traces of this family of winegrowers can already be found in the 17th century. From generation to generation, the Pavelot estate gradually grew to encompass 9 hectares of vineyards. Having succeeded their father Régis at the end of the 1990s, Luc Pavelot and his sister Lise decided in the 2000s to convert the entire vineyard to organic viticulture, which they achieved in 2009. In the same way, unlike their father, all their production is bottled and sold by Domaine Pavelot.

Today, 2/3 of the estate's 9 hectares are devoted to AOC Village, 1er Cru and Grand Cru Corton red Burgundies (Pinot Noir), and the next third to AOC Régionale white Burgundies (Aligoté, a superb variety because it is actually located in the Pernand Vergelesses AOC), and AOC Village, 1er Cru and Grand Cru Corton Charlemagne (Chardonnay). The wines generally produced in the commune of Pernand Vergelesses are a little less well known in the media, probably to a fault, because a climate like that of Les Iles de Vergelesses is ideally situated with a south-easterly exposure on the Vergelesses hillside. A Gallo-Roman villa was even established here 2,000 years ago, and the Domaine Pavelot has preserved a few tiny remains. The Luc et Lise Pavelot estate produces precise wines of great finesse, and unlike other estates, perpetuates a certain tradition by, for example, preserving a parcel of Aligoté (regional appellation) whose vines are located on the terroirs of the Pernand-Vergelesses AOC, whereas if the Pavelot estate replanted with Chardonnay, the wine would be sold at a much higher price. Similarly, their Grand Cru Corton Rouge is located on a parcel 'en Charlemagne', but because it is Pinot Noir, it cannot claim this climate on its labels (as Chardonnay, the wine would command a higher price, and yields would be more comfortable). So the reasoning is not dictated by economic imperatives. As for white wines, Domaine Luc et Lise Pavelot produces a round, ripe cuvée of Pernand Vergelesses village, 2 Premiers Crus: the climat Sous Frétille, with its supple citrus flavours and fine vanilla notes, and the climat En Caradeux. A superb Corton Charlemagne Grand Cru completes the range. Red wines include Aloxe Corton village, Pernand Vergelesses village and the Premiers Crus Vergelesses, Les Caradeux, Les Fichots and Ile de Vergelesses. In red Grand Cru, Domaine Lise et Luc Pavelot produces a remarkable, fine Corton. All the wines are of excellent quality, and well worth a visit to this range of crus surrounding the mythical hill of Corton.
