At the time, the Château Yvonne vineyard covered just 5 hectares, but it had already been working organically since 1998, and was certified organic in 2007. The Château Yvonne vineyard now covers 11 hectares (8 hectares of red Loire wines and 3 hectares of white Loire wines), divided into 28 plots of Cabernet Franc and Chenin. Situated between the communes of Parnay and Montsoreau, the Château Yvonne vineyard is made up entirely of Chenin (white) and Cabernet Franc (red), planted on lacustrine limestone soil. At the winery, which is housed in old troglodytic cellars, the work is carried out with as little intervention as possible. The grapes are harvested by hand, the wines are aged in barrels for a long time and are neither fined nor filtered. As for the red wines, the Château Yvonne La Folie cuvée is produced from the Clos Lintier, Les Chalonges and Les Pierres Blanches plots, themselves located in the commune of Champigny. Château Yvonne's "La Folie" is a Cabernet Franc that was vinified for 4 weeks in concrete vats using indigenous yeasts. After malolactic fermentation, the wine is matured in wooden tuns for 12 months. This 'La Folie' cuvée, which aims for finesse and freshness, exudes black fruit aromas, a purplish colour and a full-bodied palate with silky tannins and flavours of strawberry, raspberry and cherry. With an ageing potential of around 5 years, this wine is best enjoyed on the fruit, but should be decanted before drinking. Château Yvonne's 2018 Saumur Champigny has an initial nose marked by ripe black fruit such as burlat cherry, with hints of vanilla. On the palate, the wine is structured and full-bodied, with elegant tannins that are already well developed, but its solid structure gives it excellent ageing potential. The Château Yvonne Saumur white "Gory" cuvée is a sumptuous, ripe Chenin with notes of yellow fruit and candied citrus fruit. Behind its very fruity aromatic bouquet lies a full-bodied, fleshy palate with great balance. The whole is racy and elegant, with a salinity that lends energy to the finish, and there is no doubt that it will develop over 5 to 7 years. It is worth noting that the estate has been biodynamic since 2012, which can only reinforce the meticulous care that goes into the entire production of Château Yvonne.
