The estate has 5 hectares of vineyards (4.8 hectares of red Rhone (80% grenache noir, 20% mourvèdre) and 0.2 hectares of white Rhone (95% clairette and 5% grenache blanc). The vineyards are divided into 6 parcels, all located on the road to Orange in the Palastor, Bois Dauphin and Cabrière districts. A former Michelin-starred chef, Jérôme Gradassi turned to wine in 2004, after taking over 3 hectares of vines from his grandfather. Since then, he has run his own estate, which he cultivates alone with the utmost care, opting for a traditional approach: grapes with little or no de-stemming, vinified without artificial additives and using used barrels (no new wood). The 'cold' soils used by the estate are not afraid of drought, and produce elegant wines with more finesse than power, with plenty of scents of the garrigue. Domaine Jérôme Gradassi's production is small: a single cuvée in each colour, with around 10,000 bottles of red Châteauneuf du Pape and 800 bottles of white Châteauneuf du Pape. Jérôme Gradassi uses no fertilisers, pesticides or weedkillers, and only sulphur, but in moderation. The soil is worked in the traditional way, and the grapes are harvested by hand in crates. In the cellar, the grapes are vinified as whole grapes in tiled concrete vats dug into the rock, which ensure that the natural warmth is retained over a long period of time. Vinification is traditional, using indigenous yeasts, with around 4 weeks' maceration and manual punching down. The wine is aged for 10 months in old barrels (between 4 and 10 years). Gradassi Châteauneuf red has an expressive, very pleasant nose of black cherry, pepper, liquorice and blood orange. On the palate, it is smooth and well-balanced, with fine tannins. It will keep for 10 to 15 years. The splendid white is very special, with 2 varieties of clairette (white and pink) that give it a very special nose and mouth. It smells of the sea and shellfish, with a hint of fennel. On the palate, the wine is taut on the palate, then soft and full-bodied. You can drink it straight from the bottle or leave it to mature for 10 years. Don't hesitate to discover the 2 wines from the Gradassi estate if you are not yet familiar with its production, as the only drawback will soon be the difficulty of obtaining them, given the estate's very small output.
