The Vincent Laval estate markets a small production of champagnes, vinified in casks, which reflect the qualitative vision of a particularly gifted winemaker with perfect technical mastery, enabling him to produce very fine wines without artifice, and which faithfully reflect the terroir of the Cumières hillsides. From harvest to bottling, the barrels are topped off every week, and the different grape varieties and localities, which were previously vinified separately, are blended before bottling. The entire production is stored on laths and aged on the lees for 18 to 50 months, depending on the cuvée. Riddling is carried out manually on a rack for around thirty days before disgorging. The different cuvées offered by the Georges Laval estate are : Cuvée Cumières Premier Cru, a white Champagne made from a blend of 3 grape varieties, harmonious and unfined. Cuvée Les Chênes is a great white champagne from Georges Laval, with no dosage, characterised by its finesse, complex structure and lingering minerality and saltiness. The Les Hautes Chèvres brut nature cuvée is made from Pinot Meunier grapes planted in 1930 and 1971, and delivers a lovely, complex range of aromas on the palate, combined with the mineral tension of the terroir. This is a great wine. The Les Long Violes cuvée from the Georges Laval estate is made from Pinot Meunier and Pinot Noir using massal selections, and only 1500 bt are produced, having aged for at least 50 months on laths. The latest creation from Domaine Laval is Cuvée Garennes, made from Pinots Meuniers from the Chambrecy terroir blended with reserve wines from Cumières. This is a beautifully fruity champagne to which barrel ageing has added substance, roundness and intensity. All Georges Laval champagnes are full-bodied, remarkably dense and salty, with perfectly controlled oak. We recommend that you cellar them for a few years (4 to 10 years), to allow them to develop their full expression. In view of their vinous character, we recommend that the champagnes from the Georges Laval estate are not served too chilled, and that they are aired or possibly decanted.
