For 4 generations, the Chevillon family has continued to work their highly regarded domaine Chevillon of which Bertrand and Denis, the sons of Robert Chevillon, oversee their 13 hectares, 8 of which are premiers cru of Nuits Saint Georges ("Les Vaucrains", "Les Saint-Georges", "Aux Bousselots", "Les Cailles", "Roncière", "Perrières", "Les Chaignots" and "Les Pruliers"). They also own a Nuits-St-Georges village red and a rare Nuits-St-Georges village white that exhales notes of white flowers, honey and brioche. Opulent, but not flabby, it merits the attention of connoisseurs who will drink it between 4 and 7 years. Here, the grape selection is demanding, ageing takes place over 18 months and new oak hardly is beyond 30% so as not to erase the identity of the wines. The resultant wines are renowned for their finesse and their potential for long-term ageing. The wines of the finest terroirs such as the first growth parcels of Nuits-Saint-Georges "Les Pruliers", "Les Saint Georges" et "Les Vaucrains" are often found in tastings of the finest producers of Nuits-Saint-Georges. The pinnacle without contest being the Nuits-Saint-Georges premier cru "Les Saint Georges" with its dark robe, it offers great aromatic complexity and fruit that evolves towards toasted notes and spices mixed with animal notes of fur and musk. The structure is rich, complex and powerful, but always elegant. As with all age worthy Grand cru wines one could wait 15 to 20 years, but the Chevillon style is often approachable and harmonious in their youth. The Domaine Chevillon owns 1.63 hectares of Nuits-Saint-Georges 1er cru "Les Vaucrains", which displays a dark robe with a powerful nose marked by black fruit, blackberry and a certain wildness, it can evolve towards vegetal and animal notes such as forest floor and venison. The wine is ample, full-bodied, large scaled and forceful with a certain firmness. It is recommended to wait at least 8 to 10 years to benefit from all the wine has to offer, that is, a Grand vin, complete and distinguished. Expressive and energetic, the Nuits-St-Georges 1er Cru "Les Cailles" is an athletic wine, deep and sleek that sits upon crunchy ripe tannins of great finesse. An excellent compromise between a wine to enjoy in its youth or to keep for later, as the Nuits-St-Georges 1er Cru "Les Chaignots" can be, with its crunchy morello cherry fruit, it is tensioned, dense and beautifully concentrated. The wines of the Domaine Chevillon are all to be recommended and are presently still easy to find and at great prices, so why wait?
