The distinctive feature of Domaine Coessens is that all the wines produced come from a monopole named Largillier, which takes its name from the clay in the soil. After studying the soil pits dug, it turned out to be a marly Kimmeridgian (clay-limestone with low fertility) quite similar to the Chablis terroir in Burgundy. On this 3.36 hectare Largillier monopole, a single grape variety is planted, Pinot Noir, which makes up all the cuvées. The vines are between 35 and 45 years old, and the production is very meticulous. Jérôme Coessens has even called on Yves Confuron (from the Confuron Cotetidot estate in Vosne Romanée) to produce a rare Coteaux-Champenois red wine (1000 bt). The other Domaine Coessens cuvées are: Cuvée Largillier Brut Nature, with a flinty nose, creamy, rich and fresh with a finish of fine bitters. The cuvée Largillier Blanc de Noir is a red fruit cuvée with a beautiful, unctuous, full and generous body (the dosage is perceptible). The Cuvée Largillier de Coessens Les Sens Boisés has a fresh, slightly vanilla nose and a full, generous, brioche-coloured palate of ripe red and yellow fruit and dried fruit. This is a complex, rich white Champagne with good length. Finally, the Cuvée Largillier Rosé de Coessens has aromas of faded rose, peony, strawberry and cherry, and is vinous on the palate, with tangy red and black fruit. This is a bled rosé Champagne. The very limited production of the Coessens estate gives a glimpse of its real dimension as part of a meal or aperitif. What all Coessens champagnes have in common is that they are full-bodied and powerful, with fine, delicate bubbles. These are fine, expressive wines, and despite their rarity, they are still reasonably priced. To be discovered as a matter of urgency.
