The 3 hectares of vines at Domaine David Leclapart are located in the Marne department in the commune of Trépail, in the Reims mountains, and have been planted since 1946 with 80% Chardonnay and 20% Pinot Noir. David Léclapart has eliminated the use of chemicals, decided to plant grass in his rows of vines and makes preparations that nourish the plant and respect the natural balance of flora and fauna. Sulphur is used as little as possible, and no additives are used for the setting of the foam. David Léclapart produces champagnes based on finesse and elegance, with particularly silky bubbles. He makes only vintage champagnes, not measured out, which can be considered as snapshots of his Trépail terroir. In short, a winemaker's champagne with character, and a rather unique DNA... The proof is in the various Champagne cuvées served at the region's top Michelin-starred restaurants. These are velvety champagnes, with delicate bubbles and fine acidity that doesn't detract from the suppleness of the wines, but adds just the right amount of freshness and persistence. The cuvées produced by David Léclapart are made from a single grape variety and a single vintage, so the winemaker also has a poetic spirit, since his cuvées all begin with the letter A: 'L'Amateur', 'L'Apôtre', 'L'Artiste', 'L'Aphrodisiaque' and 'L'Alchimiste' in rosé Champagne. The whole production is a real and authentic treat, subtle and complex, but always pure: a lively juice that is generally full-bodied, but can sometimes be reserved. So don't hesitate to let it air out by opening it in advance, but it can also be decanted. "L'Artiste 2014" from Domaine David Leclapart is half vinified in oak barrels to bring complexity to a cuvée that is above all about finesse and purity. This white champagne has a pale gold colour with very fine bubbles. On the nose, it has lovely floral notes, apple and candied fruit, and a touch of citrus. On the palate, after a lively, dense attack (no dosage), the cuvée is round, generous and very silky. The finish is very long, carried by delicate citrus bitters and a strong minerality. David Leclapart's Champagne "L'Apôtre 2014" is a champagne vinified entirely in oak barrels, with a deep golden colour studded with fine bubbles. On the nose, it develops notes of white flowers and citrus fruit, followed by sweet, toasty spices. On the palate, "L'Apôtre 2014" is a champagne with a fresh, broad attack, which then unfolds its silky texture over beautiful pastry-like aromas of candied fruit and spices. A taut, elegant cuvée with good ageing potential. Since the 1980s, the best vintages in general in the Champagne appellation have been: 1982, 1985, 1989, 1990, 1996, 2002, 2004, 2005, 2008, 2012, 2015 and 2018.
