The house currently produces a small range dominated by Chardonnay that privileges elegance, freshness, minerality and tension. Their holding of Chardonnay (averaging around 45 years old) include Premiers crus and Grand crus in the Côte des Blancs (Cramant, Chouilly, Cuis) and at Sézanne whereas their vines of Pinot Noir are situated in the Marne valley. The vineyards are organically cultivated and the vines only receive plant-based treatments inspired by biodynamics. His work justly received recognition in 2017 as he was elected winemaker of the year by the Trophées champenois.
Elegant and fresh, Champagne Dhondt Grellet « Dans un Premier Temps » is an easy drinking white Champagne perfect to start with. It's a blend of 50% Chardonnay from Sézanne, 30% Pinot Noir from d’Avenay Val d’Or in the Marne Valley and 20% Pinot Meunier from Cuis. The dosage of 5g is meant to retain freshness and impart roundness to counterbalance its powerful finish, bitterness and natural minerality. Champagne Dhondt Grellet « Les Terres Fines » is a delicate Extra Brut Blanc de Blancs composed of 100% Premier Cru Chardonnay from Cuis in Côte des Blancs, reputed for its chalky soil. 70% is from the most recent harvest and 30% from a solera begun in 1986. With a dosage of just 2g, its lemon yellow hue and small delicate bubbles, it's an expressive yet delicate Champagne marked by the chalk soils of Cuis and citrus zest finish. « Cramant » is a 100% Extra Brut Blanc de Blancs from 50 year-old vines in Cramant in the Côte des Blancs. With its 3.5g dosage, its fine bubbles carry subtle notes of lemongrass and chalk to a pure, crystalline and ethereal finish. Dhondt-Grellet produces beautiful, expressive and true grower Champagnes worth tasting and discovering.
