The wines are vinified by Bruno Gaspard, assisted by oenologist Philippe Cambie, who is very famous in Châteauneuf du Pape for having vinified numerous Châteauneuf cuvées that have obtained the supreme Parker's 100/100 rating, as was the case for the La Réserve du Clos du Caillou cuvée in 2001, 2005, 2007 and 2010 (4 times 100/100 in 1 decade!). Clos du Caillou comprises 9 hectares in the Châteauneuf du Pape appellation, located on an exceptional terroir composed mainly of rounded pebbles and filtering sands, and 44 hectares in the Côtes du Rhône appellation, but will probably soon include the Panisse estate (comprising 6.5 hectares of Châteauneuf-du-Pape, and acquired at the end of 2020). Clos du Caillou is certified organic and is moving towards biodynamic farming. However, there are no century-old vines here, as the majority of the estate's vineyards were planted in the 1950s, but the age of the vines is nonetheless venerable. The Clos du Caillou range comprises 5 Châteauneuf du Pape wines: just 1 white, 'Les Safres', and 4 reds: 'Tradition', 'Les Safres', 'Les Quartz' and the most famous, 'La Réserve'. The white 'Safres' (40% Grenache Blanc, 30% Roussanne, 30% Clairette) has a very floral bouquet with light mineral notes of graphite. On the palate, the wine exhales aromas of flat peach and vine peach combined with blood orange and candied citron. A wine full of complexity and balance. For the reds, "Safres" offers a nose of subtle aromas of red fruit, orange peel and salted butter. Smooth and fresh on the palate, with notes of cherries in brandy and cocoa, superb balance, great finesse and good length. The 'Les Quartz' cuvée (70% Grenache, 30% Syrah) has an elegant, subtle nose of orange marmalade and candied cherries, combined with sweet spices. Smooth and suave on the palate, with long-lasting, elegant aromas. Finally, "La Réserve" 2017, 55% Grenache and 45% Mourvèdre, develops a bewitching nose, powerful but delicate, with aromas of plum liqueur and raspberry coulis. The palate is superb, smooth and dynamic, with aromas of fresh fruit compote, wild blackberry, wild strawberry, blueberry and blueberry, accompanied by a hint of spicy curry. In the Côtes du Rhône, the white "Le Bouquet des Garrigues" has an elegant, precise nose of white-fleshed fruit, ripe pear and hints of Victoria pineapple. Very fresh on the palate, with hints of yellow nectarine. Good length, with hints of liquorice on the finish. A wine to be recommended.
