For 30 years, the estate has practiced massal selection, using old vines to create new vine plants, and the recipe works perfectly. The vineyard is divided into nearly 20 plots, exploited in 9 sectors: the Côte Blonde, which is the oldest plot dating from 1929, the Côte Brune and its terraces, Landonne and its high altitude, Chavaroche, Mollard, Baleyat, Truchet, Fongeant and Leyat. The vines, nearly 50 years old on average, are worked by hand throughout the year according to principles of "agriculture raisonnée", banning the use of insecticide. The average yield is about 40 hl/ha and the Levet estate uses manure to promote vine growth. At the winery, macerations are long and the aging time is 24 months in barrel in order to accentuate their ageing potential. The proportion of new oak is always low in order to let the terroir express itself with elegance, and to privilege the fruit without marking the wines. On average, Domaine Levet produces 12,000 bottles of wine annually, separated in their three Côte-Rôtie. The first, «Amethyst», is a blend of all the vines of the estate, it's a harmonious and balanced wine, spicy, smoky and mineral with supple and elegant tannins. It can be opened early. «Maestria» is a delicate and elegant wine, characterised by intense fruit, with notes of flowers and smoke and very fine tannins. It comes from the famous La Landonne plot, and can be kept for at least 10 years. Finally, «La Péroline» is refined, juicy and balanced, with a floral and smoky bacon finish. It is powerful, racy and rich in tannins, with very marked mineral notes, and has great aging potential of 15 years or more, imperative for it to reach it's full potential. Finally, the estate offers in small volume a very elegant Condrieu, of course 100% Viognier. The wines of the Levet estate come fully recommended, Amethyst being the wine the most immediately approachable, and inexpensive, in order to appreciate the style of the wines of the estate.
