Although the Montagne de Reims is particularly rich in Pinot Noir, the Vilmart-Champs family is particularly fond of Chardonnay, which accounts for 60% of the 11 hectares of plots that make up the estate. Over the years, Vilmart has forged a strong, distinctive identity for itself, and the quality and finesse of its wines are now universally recognised. All the wines are vinified exclusively in wood (in a mixture of old Alsatian tuns and recent barrels), which gives the wines their unique character, giving them fruitiness, roundness and finesse. The absence of malolactic fermentation is another specific feature of Vilmart white champagnes. Freshness, tension, finesse and the typicality of the aromas are thus preserved. After 10 months of vinification in wood, the wine is bottled and stored in the estate's chalk cellars for 3 to 4 years for the non-vintage champagnes, and 5 to 8 years for the vintage champagnes. The Vilmart range includes 3 cuvées: the Champagne Grande Réserve, 70% Pinot Noir and 30% Chardonnay, matured for 10 months in oak casks, without malolactic fermentation and with a dosage of 9g. Its blond colour with golden tints heralds a wine with a majority of Pinot Noir and good maturity. Enlivened by a fine effervescence, this cuvée is marked by its intensity, opening with aromas of biscuit, ripe wheat, pear and cherry. The nose then becomes fuller and more complex, releasing delicate notes of iris, oak and white pepper. With aeration, notes of melted butter and toast emerge, signalling a harmonious evolution of the wine. The fine mineral notes bring complexity and depth, striking a balance between fruit, biscuit, bread, butter, mineral and spice aromas. Cuvée de Champagne Vilmart Grand Cellier, 70% Chardonnay and 30% Pinot Noir, releases seductive toasted notes of preserved lemon, bergamot and grapefruit, accompanied by floral notes of honeysuckle and lilac, on a creamy touch of fresh butter. The wine also expresses spicy notes of ginger and lemongrass, and the sweet gourmand sensation that accompanies it remains highly digestible. The nose is complex, fine and full of character, with a creamy, harmonious texture underpinned by a fine acidity that stretches the wine throughout the tasting. The finish is clean, slightly mineral and long, with delicate citrus bitters that leave the impression of a dynamic, vigorous wine. Cuvée de Champagne Vilmart "Grand Cellier millésimée" has a very elegant, airy, floral, spring-like nose and notes of candied pineapple, cardamom and white pepper on the palate. The expression is mature, complex and full of personality. The wine continues to evolve in the glass, with aromas of cinnamon and gingerbread. The wine is full-bodied and woody, making this a fine gastronomic Champagne.
