For over 10 years the estate has been one of the jewels of the Cahors appellation and has been producing biodynamic wines since 2004. While originally not from the region, Matthieu is a graduate oenologist from the Bordeaux Institute of Oenology, and Catherine holds a BTS in viticulture and oenology. They also have an obvious talent for knowing how to spot exceptional plots, and producing magnificent Cahors. The very particular terroir called siderolithic (rich in iron ore) gave its name to one of the cuvées.
« Le Sid » 2015 presents an intense and complex nose of aromas of violets, blackcurrants, liquorice, a dense and rich mouth with a slight woodiness. It is advisable to decant the wine, which would go wonderfully with red meats accompanied by porcini mushrooms and game, roast duck, truffles.
The Cuvée de Cahors “La Fage”, very well rated by critics, comes from a clayey-gravelly soil of the "troisième terrasse" of the appellation, that is to say from lands from a higher altitude. The plot has around 5 hectares of vines with an average age of over 30 years. The vinification is in stainless steel vats and the aging period is 14 months in one year-old barrels. The wine presents a nose of ink and coffee, a mouth of black fruits, accompanied by velvety and racy tannins, full-bodied but nicey balanced, with a good tension on the finish. A very fine wine that will keep for 5 years.
The Cahors "Les Laquets" is a cuvée from a 5,5 hectare plot over 45 years old on red clay soil with a cracked limestone base. It is 100% Malbec, produced with low yields (30 hl/ha), vinified in whole bunches with several manual punching down and aged for almost 2 years in both new and one-year old barrels. The nose is rich in black fruits and the mouth is full of blackberries, black cherries and blueberries, with an incomparable silky matter and caressing tannins, ending with intense and deep flavours of menthol and liquorice. Of course, it is advisable to let the wine age for at least 6 to 7 years for it to taste at its optimum.
Finally, the Cahors "La Marguerite", began with the 2011 vintage, produces around 2,000 bottles yearly from a small plot of relatively vines just over 15 years old. The wine is captivating, extremely silky, incredibly powerful and remarkably concentrated, but above all, full of finesse. A marvel of fruit purity (blueberry, blackberry, liquorice), and endowed with a probable ageing potential of 15 years or more... for thrill seekers.
