No chemical weeding is practised on the Xavier Monnot estate, and only organic fertilisers are used. Xavier Monnot works his 17 hectares of vineyards on the terroirs of Meursault, Puligny Montrachet and Chassagne Montrachet, applying modern winemaking methods to produce wines that are accessible when young. Xavier Monnot's simple white Burgundy les Grandes Coutures is always a very open and expressive wine, which will fully satisfy tasters looking for excellent value for money. Xavier Monnot's Meursault les Chevalières, whose parcel lies directly on the outcropping bedrock, is even more tautly mineral. Its position is directly under the influence of the cool westerly winds from the Combe d'Auxey Duresses. The nose is dominated by yellow fruit and white flowers, with hints of almonds and toast. On the palate, the wine is full, concentrated and saline, with tension and great energy. It is worth noting that the Premiers Crus from the Xavier Monnot estate should be waited for a few years after bottling, otherwise the wine may come across as heavily aged. This is how Xavier Monnot ages his wines, to enable them to survive the years, after which the wines are dense and salivating, as broad as they are long. Xavier Monnot's Meursault 1er Cru Les Charmes is one of the most impressive in the Côte d'Or, powerful and generous, with stimulating bitters reminiscent of citrus zest and an almost tannic finish. Xavier Monnot's Puligny Montrachet 1er Cru Les Folatières is one of the best known for its size and the quality of its wines. The name "Folatières" means "crazy land" and refers to the eroded soil. Situated at the top of the hill above Clavoillons with poor soil, Puligny Montrachet 1er Cru Folatière produces a full-bodied wine with plenty of minerality. Xavier Monnot's plot consists of old vines planted between 1959 and 1973. The wine is aged for 12 to 14 months, of which 1 third is new oak. On the nose, the wine has aromas of lemon, tangerine, dried white flowers, spices and sweet pastry notes. On the palate, the wine is fine and racy, with good acidity and an elegant profile. The finish is mineral and saline, with good length, and it should keep for at least 10 years. In red Burgundy, wines such as Xavier Monnot's Volnay 1er Cru Clos des Chênes are fairly well structured, but they may have a few tannins in their first few years that need a little time to mellow. The quality of Xavier Monnot's production is high, and this is an estate to be recommended to lovers of Burgundy.
