Domaine William Fèvre's wines tend to be straightforward and austere when young, so you need to be patient or opt for warmer vintages. The Chablis Grand Crus Bougros côte de Bouguerots, Les Clos, Les Preuses, Valmur and Vaudésir are the greatest white Burgundy wines of Domaine William Fèvre. They have an ageing capacity of 10 to 20 years. The 2014 Chablis grand cru Clos has restrained power, great scope and precision of flavour, harmonious, with fine hints of menthol and citrus fruit on the finish (17.5/20 RVF and 19.5/20 B&D). The 2014 Chabis grand cru Preuses is very saline, straightforward, still reserved aromatically, with an unctuous and creamy feel on the palate, tension, a great wine in the making, which requires patience (17/20 RVF and 18/20 B&D). The Chabis Grand Cru Bougros Côte de Bouguerots in 2014 has a superb saline and salivating expression, very straight, with flesh and power, intense persistence (18/20 RVF and B&D). The 2013 Chabis grand cru Valmur is fruity, pure and chiselled. It starts off discreetly but gains in energy as it is tasted.Best in a few years (17.5/20 B&D). The 2014 Chablis grand cru Vaudésir has surprising power and floral intensity, and a tight mouthfeel. The peppery finish is very pronounced, with plenty of minerality due to the terroir (17.5/20 B&D). The Chablis 1 er Cru William Fèvre will age for 5 to 10 years or more. The 2014 Chablis 1er cru Montmains William Fèvre is elegant and very fresh, with menthol notes, refined on the palate with a good return, dense, straight, tight finish (15.5/20 RVF and 16/20 B&D). The 2014 Chablis 1er cru Montée de Tonnerre has an intense, deep fragrance of rare power. The touch combines silkiness with elegant minerality, less sharp than other vintages, more delicate and sensual but just as successful, and with a bright future (17.5/20 B&D). The 1er cru Fourchaume 2014 has dried straw aromas, an elegant and silky feel (16.5/20 RVF and B&D). The Vaillons 2014 has lovely ripe and fresh apricot fruit, a fine salinity that supports the length, a tight and tonic persistence, rated 16/20 (RVF and B&D). The 2014 Chablis 1er cru Vaulorent has a racy, elegant nose, with a discreet note of white pepper, a wine with broad shoulders, built like a grand cru, saline, straightforward, persistent, combining creaminess with tension (18/20 B&D). The William Fèvre Chablis and Petit Chablis will keep for 3 to 6 years. The 2014 Chablis is punchy and beautifully toned, straightforward with substance and liveliness.
