Chablis is the northernmost designation of Burgundy, made exclusively from Chardonnay (Burgundy white wines), on 4,800 ha around the town of Chablis. Chablis includes 7 Chablis Grands Crus, 40 Chablis Premiers Crus, then Chablis AC and Petit Chablis AC. The climate is continental, and the risks of spring frost, enemy of the vines, are a real problem in this region. Heaters, water sprinkles, electric heating wires are widely used techniques to counter frosts in this area. The limestone soils are from Kimmeridgian times and contains oyster shell fossils that give to Chablis wines their own minerality and purity. Notes of chalk and flint, nice liveliness and aromas of citrus, apple and white flowers that evolve towards cut hay, spices and dried fruits are the characteristics of these Chablils wines that have a great aging potential.
