The wines from domaine Vincent Dauvissat

Domaine Dauvissat is a family estate which is among the most emblematic estates of Chablis. The Dauvissat estate has a remarkable terroir and produces some of the greatest white wines from Burgundy. Four generations have seen the estate grow and develop, and Vincent Dauvissat decided to take over in 1989, followed by Ghislain and Etiennette in 2013. The grape varieties of the estate are Chardonnay (for the white wines) and Pinot noir (for the Irancy red wine). The Vincent Dauvissat estate covers a dozen hectares as well as the four local appellations of Burgundy: Petit Chablis, Chablis, Chablis Premier Cru (6 ha) and Chablis Grand Cru (2.7ha).

Since its creation, and thanks to Vincent Dauvissat, the Dauvissat estate has been very well developed, and it now stands out as a worldwide renowned vineyard. Since 2002, the Dauvissat estate's wines have been organic, and the vines have been grown according to the biodynamic methods of cultivation . However, they're not looking to be recognised as such. The wines are matured in barrels of 10% new oak. The level of sulphur added to the wine is reduced to the maximum, and the wines are never stirred. The winemaking process is considered as low-interventionist, so that the wine can take in all the expression of the different climats (name of the  burgundian plots), and therefore get a good ageing potential. The Dauvissat estate produces 70,000 bottles per year. Some of the Dauvissat wines, such as the Petit Chablis are aged in feuillettes, which are the typical 132L barrels from Chablis. The maturation process is shorter for white wines: about 12 months. The Irancy, the only red Burgundy wine of the Dauvissat estate, is barrel-aged for 18 months. The Vincent Dauvissat estate has plots in the Grands Crus Chablis Les Clos and Chablis Grand Cru Les Preuses sectors, as well as in the Chablis Premiers Crus Forest, Séchet and Vaillons areas. The wines from Domaine Vincent Dauvissat have a perfect minerality to them, typical of Chablis wines, that is always very appreciated. They are known for their long and pure finish. These wines are extremely difficult to buy because their are produced in very small quantities, while there has been a growing demand for years. The critics have really appreciated these wines; RVF gave the estate three stars. Just like the Chablis of the Raveneau estate, the old vintages from Dauvissat are full of these Chablis terroir notes and flavours.
