The famous red wine is made from 35/40% Syrah and Mourvèdre, Cabernet Sauvignon, Counoise and Petit Verdot since 2006. The exceptional white wine (produced on 2 hectares and at less than 5,000 bt/year) is 80% Roussanne, 15% Marsanne and the rest Gros Manseng (the Chardonnay has disappeared since 2008 and has been grafted onto Roussanne).
The Grange des Pères red wine is immediately very expressive, richly nuanced both in colour and aroma, offering a whirlwind of spicy, floral and smoky sensations, with magnificent harmony, and great flavour without heaviness. In the best vintages, Grange des Pères red delivers notes of anchovy, tapenade, grilled meat and spicy ripe fruit. The winemaking here is traditional, with long maturation in oak barrels (around 24 months), and the vines are carefully tended, with yields rarely exceeding 20 hl/ha. Grange des Pères blanc can sometimes develop a rather Burgundian reduction, in a fat and powerful style, with notes of wax, honey and very ripe yellow fruit, spices and sometimes currants. The wine is matured in demi-muids. Full-bodied and flavoursome, this wine, with its barely perceptible acidity, has a very distinctive style in the world of great southern white wines. Laurent Vaillé is an artist, and the price of the Grange des Pères wines, as well as the critical acclaim, are a testament to his talent.
