Dominique Belluard joined the family estate in 1988 and gradually decided to switch from a conventional to a biodynamic (non-certified) approach in 2001, thereby breathing new life into its soils and terroirs. The vineyard, which has a very steep slope, is ploughed using a winch. In the Domaine Belluard cellar, the wines are vinified using indigenous yeasts and matured in amphorae and concrete ovoid vats. Domaine Belluard produces 6 cuvées: 2 cuvées of bubbles, 3 cuvées of Savoie white and 1 rare cuvée of Mondeuse in Savoie red, vinified from whole grapes in concrete vats. In terms of bubbles, the Belluard Mont Blanc Brut Zéro offers a floral nose and a creamy palate with no dosage. The Belluard Les Perles du Mont Blanc (Ayse AOC) is finer and more mineral, making an excellent aperitif wine. Domaine Belluard offers 3 white wines. Les Alpes de Belluard, a Savoy wine, is taut, with intense aromas of pear and quince and quite rich in dry extracts. It can be kept for 4 to 6 years. Belluard's cuvée Les Grandes Jorasses is made from 100% Altesse (Roussette de Savoie) grapes, and is rich on the palate. Feu de Belluard, a 100% Gringet white from the Belluard estate, has a deep but more austere profile and needs to be aired first to express subtle notes of verbena and gentian. Finally, Domaine Belluard's only red wine, Mondeuse, is not produced every year, but always in limited editions (around 1000 bt), given that it represents only 3% of the estate's vineyard area. Domaine Belluard wines are characterised by great finesse and a strong aromatic personality, in a rather unique style.
