In 2013 the two Domaines Labet merged and eventually became entirely organically certified bringing the total size to 13.5 hectares spread-out over 40 small plots, ranging from 15 to 80 ares and mostly planted from massal selections. The Domaine Labet has a wide offer of whites Jura that have been "ouillé", that is, "non oxydative" (the opposite of "vin de voile" such as the famous Vin Jaune). "Ouillage" is the act of topping-up the barrels to keep them full and thus prevent oxidation. Their Jura reds are notable for their finesse, balanced and beautifully expressive and are certainly amongst the finest in the region. The Domaine Labet has a rather Burgundian approach to winemaking as they isolate plots during winemaking to underline each unique terroir character. Labet Côtes du Jura Chardonnay "En Chalasse" is a powerful, intensely aromatic wine (honey, citrus, flowers) of magnificent richness, almost buttery, that can perfectly accompany creamy fish dishes. Labet Côtes du Jura Chardonnay "Les Varrons" is made from vines aged over 80 years old planted on a plot particularly rich in limestone. The wine is limpid with a generous nose of yellow fruit, vanilla, camomile, full-bodied and structured with a long salty finish. It can be kept from at least 5 to 7 years and up to 20 and beyond in exceptional vintages. The intense Labet Fleur de Savagnin is named after the emblematic Jurassian varietal, Savagnin. The nose is complex and aromatic, with notes of flowers, fruits, dried grilled fruits, wax and spices and can be enjoyed in its youth or after 5 to 8 years of cellaring. The Labet red "Métis", made as a Vin de France as it is a blend of Pinot Noir, Trousseau and Poulsard, is vinified for 9 to 10 months in old oak and is the definition of moreish. With stunning freshness, red fruits are accompanied by delicate spices and would thus be a perfect pairing with tuna.
