Despite a great diversity of terroir, there are only six designations in Jura: Arbois / Arbois Pupillin, Cotes du Jura, L’Etoile, Chateau Chalon, Cremant du Jura and Macvin du Jura.
The yellow wines of the Jura have a remarkable typicity. Produced from Savagnin only, the wines are kept for at least six years in oak barrels without topping or racking. A veil of yeast is formed on the surface to isolate the air present in the barrel and prevent oxidation. It is these yeasts that give the yellow wine of the Jura that special aroma of nuts, dried fruits and spices. Once this aging is finished, after the traditional breakthrough, the yellow wine is put in clavelins, these atypical bottles of 62cl. If you are looking for long-aging wines, do not hesitate, the yellow wines of the Jura will cross the ages, like straw wines for your dessert wines.
The wines of Jura are now in full swing and the names of certain renowned winemakers are turning heads: Pierre Overnoy, Jacques Puffeney, Jean Francois Ganevat, Jean Bourdy, Jean Macle, Pignier, Tissot, Domaine de la Pinte… These essentials are purists, in search of the purest expression of their terroir, in particular by working the vine in ORGANIC / biodynamic cultivation. Jura winegrowers are the most ORGANIC in France, working in a collective spirit.
