The organically grown grapes are sourced from five winemakers. "Clandestin", meaning “something done secretly”, is an homage to the origin of this terroir-driven champagne: long underestimated plots of Pinot noir, southernly exposed on Kimmeridgian soil as well as Chardonnay on Portlandian soils just above Buxières. Plots with southern or south-easterly exposition have been long favoured in l'Aube due to their exposure to sun, whereas those west facing plots have been less so. Champagne Clandestin currently has two white Champagnes, a 100% Pinot Noir and another 100% Chardonnay, both are bottled each vintage and are from isolated plots. "Les Semblables", comes from Westerly-facing plots of Pinot Noir and produces a complex and striking wine with deep aromas of ripe red fruit (raspberry, redcurrant) and spices lifted by an elegant and sober minerality completed by a lean finish. "Les Grandes Lignes" is a 100% Chardonnay wine of tension and minerality from a southerly-exposed plot planted on Portlandian clay. Both parcels are organically cultivated (and certified by ECOCERT) and meticulously vinified with the same precision and practices that have made Bertrand Gautherot's wines at Vouette & Sorbée so sought-after. Stylistically, Clandestin's Champagnes are moreish wines of great complexity, mineral and tightly-wound, much the opposite of the classics of the region. Every grape at Clandestin is manually harvested, with wil fermentation, carefully and lightly pressed, as demandingly as they are sorted. After fermentation, the wines are fermented in neutral French oak barrels of 300 to 500 liters before aging “on lattes” for 15 months. Bottling is done without filtration or dosage in order to conserve the unique expression of each terroir. Champagne Clandestin, though young, has already deservedly aroused the interest of amateurs of Champagne the world-over.
