All the wines from Pauillac, Bordeaux

The Pauillac designation (PDO) stretches along the left bank of the Gironde between the appellations Saint Estephe to the north and Saint Julien to the south. Pauillac is without any doubt the most famous and prestigious designation of the Haut Medoc. Composed of 18 Crus Classes, the Pauillac PDO concentrates 3 of the 5 Premiers Crus Classes of Bordeaux from the  wine classification of 1855 (Lafite Rothschild, Latour, and Mouton Rothschild). Pauillac (whose name comes from a small port on the Gironde) extends over approximately 1,200 ha. The terroir is less homogeneous than in Saint Julien but the best Crus Classes comes from well-drained soils (due to gravels) and where stones reflected solar heat and give it back to the vines. Made from the main Bordeaux grape varieties, majority of Cabernet Sauvignon and Merlot (Cabernet Franc and Petit Verdot are used as an adjunct), Pauillac wines are well renowned blended wines. The wines of Pauillac represent the archetype of the great red wines of Bordeaux (the designation does not produce Bordeaux white wine), both rich and powerful they are famous throughout the world and often honoured by the great critics, susch as parker, with  tasting notes scores  that can reach the famous 100/100 rating of Robert Parker. Combining strong tannins, richness, but also great finesse, these are wines are suitable for long aging, whose ageing capacity in bottle can be counted in decades for the greatest wines of Pauillac. Pauillac can reach its peak in hot and dry years, and it turns out that the success of this designation (thanks to the reputation of its three 1st classified growths of 1855) is particularly observed during the annual tasting of Primeurs, setting a mark for the vintage. The full-bodied profile of Pauillac red wines will match very well with game, lamb and  even with mimolette cheese.
