Yields are carefully limited and the grapes are only harvested by hand. The wines are matured for 18 months in 132-litre barrels and feuillettes. Only some of the Butteaux and Montée de Tonnerre premiers crus are aged in new oak. The triptych of ripe fruit, minerality and mastery of ageing are the keys to the success of Domaine Raveneau's great white Burgundy wines.
