The Domaine Macle was founded in 1850 and its holdings are spread-out over 11 hectares of particularly steep slopes. 80% is planted in Chardonnay and 20% is Savagnin, the quintessential Jurassian varietal, which is also of course the only grape authorised to produce Vin jaune and Château Chalon wines. Savagnin planted on blue marl, such as those found at the Domaine Jean Macle, are capable of offering great gustatory emotions. The philosophy of the Domaine Macle is to best translate their terroir through each unique vintage. Without making concessions to their house style, the wines do alter from vintage to vintage, but to obtain great wines it is necessary to privilege terroir, which may mean risking losing one's appellation in certain vintages. Their blending choices, which may mean declassifying their wines in certain vintages, are always made in service of excellence, the proof being their exemplarily regularity. The Domaine Jean Macle finished their organic conversion in 2015 and since, Laurent Macle has forbidden any usage of chemicals. In the cellar, both alcoholic fermentation (which occurs naturally with indigenous yeasts) and malolactic fermentation take place in tanks. Thereafter, their vin jaune and Château-Chalon begin their long ageing process of at least 6 years and 3 months which aid in imparting its unique aromatic qualities thanks to the "voile", or veil, of yeast that forms on the wine exposed to air in the barrels and protects it from oxidising. The Macle family are experts of this process. The resultant vin jaune and Château Chalon are uniquely complex wines, displaying notes of walnuts and curry, fresh and dried fruits, spices and flowers. These wines are capable of retaining their exceptional energy after decades in the cellar. The Côtes-du-Jura of the Domaine Jean Macle, a Chardonnay-dominant blend, is incredibly pure and balanced, with the capacity to captivate as do the finest white Burgundy. The Macvin is a traditional liqueur made from the must and "Marc du Jura", a double distillation of grape marc. The Domaine Jean Macle is an iconic Jurassian winery that produces some of the finest wines of the region and comes recommended without moderation.
