The Cevins hillside is entirely composed of terraces of mica schist, with slopes of up to nearly 70% and very low yields (25 hL/ha), and the St Pierre de Soucy hillside is made up of sedimentary rock, schistous marls from the Jurassic, and a clay-limestone soil on average to steep slopes, but with an average yield of about 40 hL/ha. Planted on the 12 hectares of white vines of the Ardoisières estate are the grape varieties Altesse, Chardonnay, Mondeuse blanche, Malvoisie, Roussanne, and Jacquère; and on the 4 hectares of red vines, the grape varieties Persan, Gamay, and Mondeuse noire. The Ardoisières estate is practicing biodynamic viticulture and has succeeded in revitalizing certain grape varieties that are sometimes criticized (Mondeuse Blanche, Persan). The analysis of the vineyard plots confirms the good intuition of an exceptional terroir, which, thanks to a soil rich in mica schist, produces superb wines. The Ardoisières estate's Savoie red cuvée Argile (in IGP les Allobroges) is a fresh, digestible, and refined wine, with great greediness. Argile en Savoie white is a pure and chiseled wine, with a lovely acidity supported by notes of citrus and pine resin. The cuvée Schistes white is a blend of 4 Savoyard grape varieties: Jacquère, Malvoisie, Mondeuse blanche, and Roussanne. The palate is very straight, long, and the purity is crystalline. The production is only 7000 bottles. The cuvée Améthyste is a blend of Persan and Mondeuse noire, exhaling aromas of blueberries, pepper, and spices, with a greedy, powerful but very finesse mouth. Finally, Quartz is the prestige cuvée of the Ardoisières estate, 100% Altesse aged for 12 months in barrels, with notes of quince, mirabelle plum, walnut, and wisteria. The palate is structured, intense, and perfectly balanced, with great finesse, saline with remarkable persistence.
