Patrick Piuze, originally from Montreal, Canada, has always been driven by a deep passion for wine. At the age of 18, a pivotal meeting with Marc Chapoutier steered him towards a career in the wine world. After gaining experience in vineyards in Australia, South Africa, and Israel, Patrick decided to settle in Burgundy. In 2000, he joined Olivier Leflaive’s cellar in Chablis, where he honed his winemaking skills.
After years of learning from Leflaive, Jean-Marc Brocard, and Jean-Marie Guffens, Patrick Piuze founded his own estate in 2008. This decision marked the start of an exceptional journey, propelling Patrick into the ranks of Chablis’ top producers. His visionary approach and respect for the terroir quickly earned him a place alongside the region’s great names.
One of the unique aspects of Domaine Patrick Piuze is that it doesn’t own any vineyards. However, as both a négociant and winemaker, Patrick has built strong, trusted relationships with local winegrowers. Through these long-term partnerships, he meticulously selects the best plots of old vines across the Chablis vineyard.
The terroirs of Chablis are characterised by great diversity, with soils ranging from limestone to marl, each imparting a unique signature to the wines. Patrick Piuze harnesses this richness through parcel selections, particularly in prestigious areas such as Chablis Grand Cru, Premier Cru, and Chablis Village. His wines capture the minerality and finesse inherent to the different microclimates of Chablis, revealing the complexity and purity of Chardonnay.
Patrick Piuze adopts an artisanal and rigorous approach to winemaking. Unlike most Chablis producers who use mechanical harvesting, Patrick hand-picks all his grapes. This method allows for the selection of only the best fruit, essential for producing wines of exceptional quality.
In the cellar, fermentations are carried out spontaneously, without the addition of yeast. Village-level cuvées are vinified in stainless steel tanks, while the Premier and Grand Crus are aged in used barrels, mostly from high-acid vintages. Patrick ensures that overly new barrels are never used, to avoid overly pronounced oaky aromas and preserve the purity of the fruit and terroir.
Winemaking at Patrick Piuze is characterised by minimal temperature control, allowing the wines to express themselves naturally according to each vintage. Each cuvée also benefits from ageing on fine lees, ensuring a silky texture and a beautiful aromatic complexity.
