The wines produced here are unique in that they come from old vines, with very low yields (10 to 15 hl per hectare) and grapes harvested at a high level of ripeness. Fermentation takes place in concrete vats, without temperature control or sulphur, and can last up to a year. The wines are then matured in old Burgundy barrels over 10 years old, which does not mark the wine. The cellar dates back to the 17th century, and the barrels are covered in dust and moss, in contrast to modern methods. The maturing of the red and white wines is very specific, lasting between 5 and 8 years until bottling.
Depending on the vintage, the Henri Bonneau estate produces several cuvées. Unfortunately, the different cuvées, produced in very limited quantities, are particularly difficult to obtain, as the wines of the master of Chateauneuf du Pape have become collector's items since his death. In 2001, Henri Bonneau and his son Marcel bought a number of vines in the Gard region of France, which produced the cuvée Les Roulliers, labelled simply as a Vin de Table. The wine is aged in old tuns and French oak barrels for 3 to 6 years. Exceptionally deep and complex, this Chateauneuf develops massive, generous aromas of smoke, pepper and black and red fruit. Beyond the character inevitably influenced by the vintage, it is clear from tasting that the older the wines get, the more they gain in finesse. In fact, at the Henri Bonneau estate, the cuvées are not plot-based but correspond to a specific level of wine quality. Depending on the year, Henri Bonneau may or may not produce certain cuvées. There are therefore 3 different cuvées: the classic Châteauneuf du Pape, the Réserve des Célestins and the cuvée Marie Beurrier, named after the owner's aunt, who was an outstanding cook.
