Among the wines produced by the estate, the Château Chalon cuvée is one of the finest yellow wines in the world. Made exclusively from the Savagnin grape variety, this rare wine tends to improve with age, and can be kept for between 50 and 60 years. Domaine Jean Bourdy offers a whole vertical range of Château Chalon vintages from the beginning of the century to the present day, including 1945, 1951, 1953, 1954, 1955, 1958 and 1959, as well as some less successful years from other regions, which make interesting wines to offer as birthday presents, such as Château Chalon Jean Bourdy 1951 or 1958. The other interesting thing about Jean Bourdy's old Château Chalon and yellow wines in general is that they lose their 'yellow' taste with age and gain in subtlety: saffron, dried fruit and honey in particular replace the oxidative notes. In red, the Côtes du Jura cuvée, a blend of trousseau, poulsard and pinot noir grapes, offers surprising notes of spice and fine fruitiness. The white Côtes du Jura, a single-varietal Chardonnay, has great ageing potential, and can be kept for over 100 years. The wine is limpid and brilliant and goes perfectly with smoked fish or fish in sauce, as well as certain cheeses.
