Yields are moderate and the grapes are harvested by hand. The vineyard comprises 11 hectares of white grape varieties: Savagnin and Chardonnay and 4 hectares of red grape varieties: Pinot Noir, Poulsard and Trousseau. The wines are traditionally matured in casks and tuns. The Domaine du Pélican wines include the Cuvée de l'Arbois Chardonnay, with its fine minerality due to the marl soils. This white wine, made exclusively from the Chardonnay grape, is full-bodied, with notes of roasted hazelnuts and great elegance. The Cuvée Arbois 3 cépages, made from Pinot Noir, Poulsard and Trousseau grapes, is beautifully fruity with firm, full-bodied tannins. The Arbois Poulsard cuvée is more expressive. The colour is pale red and the nose offers aromas of strawberry and rose. The palate is rounder and more structured, ensuring good ageing potential. Finally, the Cuvée Arbois Savagnin is a straightforward, highly aromatic white wine with notes of lemon and exotic fruit. It is a great white wine with a wide range of food and wine pairings.
