The Guillaume Overnoy estate covers almost 6 hectares of vineyards, and since his arrival at the estate, Guillaume Overnoy has converted it to organic farming. The entire vineyard is planted with Chardonnay, Savagnin, Pinot Noir, Trousseau and Poulsard grapes. Guillaume has gradually decided to produce a large number of parcel-based cuvées, reflecting the full diversity of his estate's terroirs. When it comes to winemaking, Guillaume Overnoy excels, and his wines were quickly singled out by the critics for their purity, fruit, energy and tension. In the cellar, Guillaume uses low doses of sulphur, fermentations are triggered by indigenous yeasts and the wines are aged for long periods in barrel. The range of wines is now quite complete, and in the Côtes du Jura range, Guillaume Overnoy's cuvée de Savagnin ouillé stands out. Aged for 38 months in the cellar, it reveals subtle aromas of citrus fruit and stone. The palate is chiselled, precise and straightforward, while retaining admirable substance. A very fine wine... Guillaume Overnoy's Savagnin typé is aged for 4 years in a cellar, where the yeasts will have matured this Savagnin with its astonishing aromatic richness, accompanied by a superb mineral structure. This wine has aromas of dried fruit, walnuts and gentle hints of spices. A great table wine. Still in the Jura whites, Guillaume Overnoy's Cuvée de Chardonnay vigne derrière is a very fine parcel selection that has been aged for a long time in oak (22 months), and still possesses the same depth, minerality and finesse. This is a wine that can be laid down for at least 10 years. Guillaume Overnoy's Typé Chardonnay sous voile was matured under sail for 30 months, and comes from a clay and marl terroir. On the palate, it has a powerful aroma, but with finesse and subtlety, with aromas of almond, hazelnut and honey. Long on the palate, this wine can be kept for at least 10/12 years, and is a fine match for pressed cheeses and creamy dishes. Guillaume Overnoy has tried his hand at orange wines (from maceration) with the Chardonnay Au Vignet de Guillaume Overnoy, a well-balanced wine without excess, which confirms its status as one of the estate's great successes. Finally, in red Jura, the 'Rougissime' cuvée is a blend of 70% Trousseau, 15% Pinot Noir and 15% Poulsard. The wine is a real treat, with an exuberant bouquet of baskets of red berries and a hint of pepper. On the palate, the wine is very delicate and unctuous, but with substance, and is a pure delight. A wine to be recommended.
