The harvest is done manually, only from natural (wild) yeast, the wines are not filtered, and bottling is done just before summer. All this has never been changed, and because it's been combined with Francois COTAT's savoir-faire, the estate has then been able to make excellent and greatly aged Sancerre wines with very rich and refined structure. Francois COTAT's winery is located in Chavignol, where all the wines are produced in the traditional way.
These outstanding bottles have exceptional ageing potential. You just have to taste a vintage from the 1990s to understand that why you need to be patient to be able to enjoy these wines are their peak. The Sancerre Cul de Beaujeu plot is outstanding. Grown on steep slopes, these vines give a very mineral wine of remarkable amplitude. Wine enthusiasts will have to be careful, though, as this wine is quite tight, and are sometimes reduced in its youth (then do not hesitate to aerate it). Its full character can therefore be hindered for some years. Wines that are older than 10 years are gorgeous and can therefore be kept for 10 more years in the cellar. The 2015 vintage offers a great range of wines, and it stands out if compared to the more austere 2014 vintage, because it has that very soft flavour on the finish. No wonder the outstanding structure of these wines will be renowned in this terroir in a few years. The most patient wine enthusiasts will then be able to enjoy them. International critics have been eulogistic about the quality of these wines. The bottles from the estate are sought after by many wine lovers.
