Domaine Pascal Cotat was one of the first estates to cultivate its vines in order to create cuvees that could display the typical flavours of its plot. Pascal Cotat's Grand Cote Sancerre vines mainly grow in clay-limestone soils with high proportions of clay. That's where full-bodied, but still mineral wines are produced, displaying their citrus, white flowers and flintstone flavours. This great cuvee could be described as balanced, deep, powerful, pure and of great length. A wine with personality with a salty finish. Pascal Cotat's Monts Damnes Sancerre wine is made from 35 year-old vines that are grown on a very steep hillside, facing South. This very vivid wine displays smoky notes. Harvest is done manually and only when the grapes are really ripe. Domaine Pascal Cotat makes wines that need to be kept in the cellar, without what you could miss the main qualities and flavours that these great wines have to offer. You should therefore let them age for at least 5 years, so that the wine develops all its flavours and aromas that need time to thrive. They've got a 15 to 20-year ageing potential. As Domaine Cotat's production is quite confidential, the demand is high. It is therefore quite difficult to buy bottles of these wines! Pascal Cotat is a standard of excellence of the Sancerre designation of origin. We advise you to buy one of his cuvees when you can.
