Philippe Pacalet carefully selects his sources of quality supplies. Since ageing is crucial to the development of the wines, he takes the greatest possible care. The red Burgundies are vinified in whole bunches, in truncated wooden vats, with punching down for 3 to 4 weeks. The pomace is then removed with a fork and pressed, before the wines are matured in barrels of 1 to 3 wines for 15 to 18 months. The vinification of the white Burgundies begins with direct pressing of whole bunches, followed by a short settling period before being placed in barrels of 1 to 3 wines, so that alcoholic fermentation can begin directly in the barrel. Vinification is then carried out without sulphur, using indigenous yeasts and maturing on the lees without racking. To optimise the terroir effect and faithfully reflect the specific characteristics of each climate, no SO² is used during vinification or ageing. The wines receive special attention through monthly tastings and constant analytical monitoring. When the wines are ready, they are racked by gravity, unfiltered and placed in bulk. They rest for one to two months before bottling. The different climats on offer come from some of the most renowned appellations in the Côte d'Or. Philippe Pacalet has carefully selected the vineyard plots that best reflect the principle of his work: to express the terroir of each climate through the wine. When you taste the wines from Domaine Pacalet, the Meursault has a floral nose, ripe fruit and a full-bodied palate. The Gevrey Chambertin has a sumptuous perfume, also very floral, and will keep well thanks to its great solidity. The Pommard is a clear success, with controlled power and a captivating mouthfeel and fruit quality. The Chambolle Musigny is more muscular, with very ripe aromas. The Grand Cru Echezeaux is a real long-distance runner, offering superb notes of raspberry and plum, but should be cellared for at least 7/8 years. The Corton Bressandes Grand Cru is very young and compact, combining superb fruit and gentle spices. Impressively fleshy, it too should be kept for several years.
