The story of Domaine Fanny Sabre began in the 1980s when the Sabre family established what would become a promising estate in Pommard. However, it was in 2005 that the story took a decisive turn. At only 25 years old, Fanny Sabre took over the estate following her father's death. Although her path initially seemed oriented towards a career in law, her passion for vines and wine quickly became evident.
From the beginning, Fanny benefited from the guidance of Philippe Pacalet, a leading figure in the natural wine world of Burgundy. For three years, she learned at his side the subtleties of environmentally respectful viticulture and winemaking without artifice. This mentorship deeply influenced her working philosophy, which is based on enhancing terroir, preserving ecosystems, and seeking purity in each cuvée.
Under her direction, the estate evolved rapidly. Fanny decided to fully convert the operation to biodynamics, adopting innovative agricultural and oenological practices while respecting Burgundian traditions. Today, she embodies a new generation of winemakers, combining ancestral know-how with contemporary vision.
Domaine Fanny Sabre spans 4.5 hectares, spread across some of the most prestigious appellations in the Côte de Beaune. These terroirs, located in Beaune, Savigny-lès-Beaune, Meursault, Volnay and Pommard, are renowned for their diversity and richness, allowing each cuvée to fully reflect its origin.
These living soils are carefully maintained through environmentally respectful practices.
Fanny pays meticulous attention to each step of vine cultivation. The soils are lightly ploughed to promote aeration and vitality, while natural grass cover helps enrich biodiversity and prevent erosion. No chemical products are used, treatments rely solely on biological mixtures that respect the ecosystem. Through green harvesting and rigorous de-budding, Fanny optimises grape quality by limiting quantity. Vinification at Domaine Fanny Sabre is based on three key principles:
Indigenous yeasts: All fermentations are spontaneous, carried out using yeasts naturally present on the grapes and in the cellar.
Minimised inputs: Sulphite addition is reduced to the strict minimum, only when necessary to stabilise the wine.
Limited intervention: Processes are guided by a non-interventionist approach, letting the wine evolve naturally.
Red wines
Fanny uses semi-carbonic maceration, a method that preserves fruity aromas and freshness while bringing finesse to the tannins. Fermentations occur directly in oak barrels, allowing the wine to gain complexity.
White wines
The grapes are gently pressed before being placed on fine lees. Lees stirring is done sparingly, favouring tension and minerality in the wines.
Ageing is primarily done in used barrels to avoid excessive oak influence. The wines benefit from long contact with the lees, which strengthens their structure and aromatic depth.
Each wine is bottled by hand, without aggressive filtration, thus preserving its integrity and natural character.
