Billecart-Salmon has a fine vineyard on prestigious terroirs, and continues the tradition of remaining true to its motto: "focus on quality, aim for excellence". Its independence has enabled it to make progress year on year, both in terms of quality and quantity. In addition to the in-house vineyards, most of the grapes used in the winemaking process come from within a 20km radius of Epernay, where the Pinot Noir, Chardonnay and Pinot Meunier Grands Crus coexist. Benefiting from technical facilities upgraded in 2010 and 2018, Billecart Salmon Champagnes are matured in the new 24-foudre cellar or in the 400-barrel cellar. Mathieu Roland-Billecart, in the 7th generation, runs Billecart Salmon, supported by Antoine Roland-Billecart. When tasting the Billecart-Salmon range, a number of hallmarks stand out, such as the purity and youthfulness of the fruit, the mineral or saline tension, the finesse and caress of the mousse, and the aromatic length. The cold vinification process probably explains this fruitiness, which retains its freshness for a long time, underlined by the aromatic precision resulting from the separation of plots and/or origins right up to the blending. Billecart Salmon champagne wines are aged in 17th and 19th century cellars. Stoppered with cork, most vintage champagnes are stirred by hand. In Billecart Salmon cuvées with no vintage, the large proportion of reserve wines adds maturity and enriches complexity. The cuvées enriched with wines vinified in oak gain in depth and structure, without being dominated by vanilla or toasty aromas. Balance is the key word here. In the range, the Billecart Salmon rosé champagne cuvée is made from 40% Chardonnay, 30% Pinot Noir, 30% Meunier, and almost 10% red wine. It represents the spearhead of the Billecart Salmon house and offers a raspberry and spicy nose, a full-bodied palate with chalky freshness and a superb finish on spices and orange peel. It is a true stylistic model. The Billecart Salmon "Blanc de blancs Brut Grand cru" is a very fine wine, with aromas of white peach and citrus fruit. The palate is taut, with pure fruit, chalky minerality and superb length. Champagne Billecart Salmon Extra brut (40% Meunier, 30% Pinot Noir, 30% Chardonnay, includes 30% reserve wines) is fine and floral. The mousse is very fine, the palate elegant, and the finish invigorating, well-structured, with a long, fresh, lemony finish. Billecart Salmon vintage 2008 80% Pinot Noir, 20% Chardonnay, extra-brut, gives off complex aromas of spice, toast, mature yellow fruit and hazelnut. The palate is superbly elegant and structured, with magnificent richness and complexity and ripe notes. The finish is superbly long, with a hint of minerality. Finally, with 60% Pinot Noir and 40% Chardonnay, the Cuvée de Champagne Nicolas François Billecart 2002, totally emblematic of the Billecart Salmon house, still offers some ageing potential. Its creamy character and dense body make it a great gastronomic champagne with a fine, persistent mousse. A complex nose of roasted mature white fruit, with hints of spice and toast. The flavour of this wine is extremely deep, the bubbles very fine, and this Champagne is both powerful and delicate, very long - in short, a truly great wine for the best gastronomic pairings.
