Here, 8 generations of Paillard have shaped this estate, demonstrating real expertise in bringing out the best in Bouzy's exceptional terroirs. Accompanied by his 2 sons, Antoine and Quentin, Benoit Paillard has an 11-hectare vineyard planted with 60% Pinot Noir and 40% Chardonnay, and comprising 30 parcels classified as Grand Cru with an average age of 30 years. Benoit Paillard has given this already renowned estate a highly qualitative direction, and the philosophy applied here is as follows: respect for the soil, control of yields, parcel-based vinification and long ageing periods. A great deal of work is carried out in the vineyards, where chemical pesticides and herbicides are banned. The soil is worked meticulously and organic fertilisers (home-made compost) help to develop microbial life, root growth and the assimilation of nutrients already present in the soil. The cellar takes a low-interventionist approach in order to express as naturally as possible the personality of the pinot noirs and chardonnays grown on the clay-limestone soils of the Bouzy terroir. Malolactic fermentation is never blocked and sulphur doses are kept to a minimum. The wines are vinified by plot and matured for 9 months on lees in vats and barrels, then in the cellar, where they will age for up to 10 years on lees for the best vintages. Domaine Pierre Paillard's La Grande Récolte 2008 cuvée showcases the estate's heritage of old vines. Pinot Noir and Chardonnay are judiciously blended to produce a great Champagne full of emotion, finesse and complexity, combining vitality and vinosity. The Motelettes and Maillerettes cuvées are designed to deliver the slender identity of Bouzy's terroirs. Les Mottelettes is a blanc de blancs Champagne made from old Chardonnay vines planted in 1961 on the Bouzy Grand Cru. This cuvée is fairly confidential because there is very little Chardonnay planted on this Grand Cru. This superb Champagne stands out for its purity, elegance and mineral grace with delicate almond flavours. Cuvée Les Maillerettes is a 100% pinot noir, single parcel blanc de noirs, located in the heart of the Bouzy Grand Cru vineyards. For this top-flight cuvée, the pinot noir is pampered so that it expresses all the sensibility of the great Bouzy terroir, with superb results: fine bubbles caress the palate, accompanied by subtle, complex spicy flavours of great persistence. Les Terres Roses, a rosé Champagne dominated by Chardonnay (70%), is well marked by the flavours of Pinot Noir and extends finesse over an assertive, fresh structure.
