Champagne Chavost was born from the ambition of several winegrowers from Chavot-Courcourt, a village in the Marne Valley south of Épernay, in 1946. Named after the village's former name, "Chavost", the estate has preserved the fundamental values that motivated its creation: solidarity, sharing, and love of the land. This initial cooperative allowed these pioneers to pool their resources and expertise, with the aim of producing quality wines while supporting the local economy.
In 2019, a turning point occurred with the arrival of Fabian Daviaux, a young winemaker who had spent more than ten years making wines around the world. Drawing on his experiences and bold vision, Fabian decided to refocus the estate around the production of natural Champagnes, without added sulphites. He convinced the cooperative members to take risks by embarking on this unprecedented path for a Champagne estate. Today, thanks to this approach, Champagne Chavost stands out with cuvées that celebrate the pure essence of Champagne.
Located in the Southern Hills of Épernay, Champagne Chavost benefits from an exceptional terroir that combines diversity and richness. The plots are distributed over predominantly clay-limestone soils, with northern exposures that bring marked freshness and minerality to the grapes. This terroir is particularly conducive to growing Meunier, which thrives in these rich soils, as well as Chardonnay, which draws from the limestone veins all the finesse and elegance that characterise it.
The 5-hectare vineyard, entirely cultivated using organic farming since the 2023 harvest, reflects the estate's commitment to sustainability and respect for nature. The grapes are harvested manually at optimal maturity, ensuring the highest quality grapes. This authentic terroir allows Champagne Chavost to produce Champagnes that are both powerful and elegant, with a strong identity.
Vinification at Champagne Chavost is a true statement of intent. Under Fabian Daviaux's direction, the estate has adopted a radically natural approach, aiming to minimise oenological interventions. The wines are made without added sulphites, enzymes, tannins, or charcoal. Alcoholic fermentation is spontaneous, activated only by indigenous yeasts present on the grapes and in the cellar, at carefully controlled temperatures. Malolactic fermentation also occurs naturally thanks to the bacteria present in the cellar.
Champagne Chavost's cuvées are also made without filtration, fining, or chaptalization, ensuring maximum purity and authentic expression of the terroir. The wines undergo no acidification or de-acidification, thus preserving all their natural freshness. This meticulous process gives birth to unique Champagnes, both intense and delicate, allowing Champagne Chavost to stand out in the Champagne universe.
